Inspired by a Ted Talk on quantum levitation, Chef Battes decided to hit the kitchen and apply this knowledge to a special dish he concocted at the restaurant. The dish is called: Floating Uni.

The executive chef mastered the process by using magnets and liquid nitrogen, to create a one-of-a-kind unami-packed uni-butter filled cracker that actually floats IN MID-AIR.
